You can look for updated Blueprint5 blueprint specific options by running

jhipster-Blueprint5 app --help

And looking for (blueprint option: Blueprint5) like

Pre-release

To use an unreleased version, install it using git.

npm install -g jhipster/generator-jhipster-Blueprint5#main
jhipster --blueprints Blueprint5 --skip-jhipster-dependencies
